Summary Nov 7, 2007

Central theme:
The Holidays are coming. We need to be creative in regard to the food we bring to the feast or serve at the table, to keep Calories in check.

We had our own "Iron Chef" challenge during this session. Teams came up with their favorite low-Calories recipes. I will attempt to summarize them in the recipe section below.

Thought for the week:
Use at least one of these recipes this week, and consider them for your Holidays.

Recipes:
Pretzel Treat-
  • Bag of small pretzels
  • Bag of Rolo candies
  • Bag of pecan or walnut halves
Heat oven to 350 deg. Place pretzels on baking sheet covered with parchment paper. Drop Rolo candy on top of pretzel, and bake in the oven for 3 minutes. Remove from oven, and press the nut of your choice into the Rolo to smoosh it down.

Pumpkin Bars-
  • 1 large can plain pumpkin
  • 1 cup Egg Beaters
  • 1 cup fat free evaporated milk
  • 1/2 to 1 cup Splenda
  • Add Pumpkin Spice to your liking
Mix in bowl, bake at 350 deg in cake pan

Some other ideas-
  • Baked Squash with Marinara Sauce
  • Veggie Chili, use brown rice in the chili
  • Low cal spray-butter on toasted wheat pita bread, add garlic salt.
  • Toasted wheat pita, add pizza sauce, low-fat cheese, and turkey pepperoni (cook in micro)
